Food frenzy contest #1: Pani Puri

Golgappa /Pani Puri is a small crispy Puri which easily fit in our mouth.

Here is the recipe.

For the Puri -*-

Take rawa Suji(semolina),baking soda and salt in a bowl and mix it well . Add water and bind stiff dough. Then cover the dough with a damp cloth and rest it for 30 mins.

After 30 mins again knead the dough till smooth texture and take a round portion of the dough like a small ball.

Roll it on rolling board into roti shape with thickness. We should not roll it very thin or very thick unless the Puri will not puff up.

Make small Puri by cutting it with a small lid as shown in pic.

Now heat oil in a pan for deep frying in medium flame when oil is hot then put 2 -3 puris in the oil, one by one.

Press each Puri with spatula to puff them up and fry them until they become golden brown and crispy. After that place them on paper napkin.

For the stuffing-*-

Boil the potatoes, peel them and chop them. In a small bowl mix the potatoes, grated carrot,chop onions,cumin powder,chat masala black pepper, green chillies and normal salt. Mix them properly.

For the Pani recipe -*-

In a mixture grinder put some chopped mint leaves,coriander leaves, chopped ginger, green chillies and some tamarind pulp. Then add some jaggery powder , cumin powder, chat marsala and salt as per taste with little water and grind to a smooth paste.
Now take a bowl and add 1 cup water and mix this paste. You can add less or more water depending on the consistency you want.

Check the taste and if required add some salt. Mix it well and refrigerate it.

Serving

Serve the Puri along with stuffing and pain. While eating you need to make a hole in the puris and fill it with stuffings and add pani to it and have it.
