Ingredients

3 cups of oatmeal
1 tablespoon of baking powder
1/2 teaspoon of salt
200 g of butter at room temperature
1 cup demerara sugar
4 eggs
200 ml of milk
Zest and juice of 02 lemons
butter to grease
flour to sprinkle
Method of preparation
In a bowl, mix the oatmeal, yeast and salt and set aside.
In an electric mixer on medium speed, beat the butter until fluffy.
Add sugar and beat just to incorporate.
Add the eggs, one by one, without stopping beating.
Reduce the speed of the mixer and gradually add the flour mixture, alternating with the milk.
Lastly, add lemon juice.
When the dough is homogeneous, turn off the mixer.
Include the lemon zest and incorporate with a spatula.
Pour this dough into a baking pan with a hole in the middle, buttered and floured.
Bake in a preheated oven at 180°C for about 45 minutes.
Allow the cake to cool before unmolding.
Serve.
