Blazing Breakfast Tacos for Lunch

This morning I made some breakfast tacos consisting of beef chrorizo and eggs, seasoned with dried ghost pepper.

I heated the corn tortillas on a skillet with a little bit of ghee on it and melted some shredded cheese on it. Then I added the chorizo & egg and topped it with pickled red peppers, chipotle peppers in adobo sauce.

On the side is some grilled salmon and one leftover brussel sprout from earlier. Those got eaten really fast before I can get a good picture.

The lime is just a garnish. I don't think lime would go well on these tacos, unless some carne asada was added to them.

The chipotle and pickled red pepper adds a fair amount of heat which is complemented by the smoky flavor of adobo sauce. Even with all the spice, it is not overpowering and the chorizo flavor still comes through nicely.

I think next time, I'll add some onions and maybe some carne asada.
