Grandpa Gotta Cook—Cornbread Pie (Fail)

You're Going Down!

Hello, everyone. How are you doing? Feeling good? It's Friday, after all, and while that definitely means it's Food Fight Friday time, it also means for many the end of the work week. That ought to bring some smiles to your faces, does it not?

Good. I'm glad.

That means you won't feel so down as you read through this as I will be writing it.

Yes, I said down. It's not quite a sad, but more like a bummer. A low level disappointment.

Maybe it's best I show you, and just get it over with.

Mistakes Ahead

I've noted here on various occasions that I have some picky eaters in the household. I find that difficult to work with, since there are a lot of things I might cook if everyone would eat it. So, that limits what I can do from the beginning.

(If this sounds like the setup to an excuse for what follows, you're absolutely right. Read on.)

It's been tough as of late to come up with something I haven't already done (so I can share what happened) that everyone will eat. Each new food experiment is fraught with danger, if not flat out disaster. For the most part, I've been able to at least please my own palate if no one else's. If I manage to get two or three out of four (counting me), that's a win!

Well, this cooking outing I'm going to share was basically a bust. Even I didn't like it.

Overmodification

This all started with a recipe by Reese Witherspoon. Let me first say that Reese is in no way responsible for what happened. I'm responsible.

Coming off my universal victory with Shepherd's Pie, I decided I would take the recipe offroad once again, and do my own thing. See, the recipe called for cornbread cooked on top of homemade chili. Well, I wasn't feeling the chili (not sure why now), but I figured I could come up with a combination of ground beef and such that would be tasty.

So, I went to my old standbys—mushrooms and bell pepper, and pretty much followed the recipe otherwise. I did use Famous Dave's cornbread mix instead of Jiffy's, but that wasn't the issue. The cornbread turned out just fine.

The problem was, the sweetness of the cornbread versus the taste of the meat mixture. Separately, they were just fine. Together, well. They did not compliment each other. One bit.

The Details

The recipe started with putting oil in a pan, then throwing in some onion and minced garlic, which I did. I also added the bell pepper and mushrooms. Once that was done, in went the ground beef. The recipe also called for ground pork, which I didn't have, and didn't really want (or so I thought). Diced tomatoes were supposed to go in, along with tomato paste. For some reason, I left out the tomatoes, but put in the paste.

When the meat was done browning, the chili part of the mix was supposed to go in. I'd already opted out of doing that, so I spent time mixing up the cornbread, and when it was done, I put everything in a baking dish, meat mixture first, cornbread on top.

Then, it all went into the oven at 375 degrees for 35 to 40 minutes.

It Took Longer

I was advised by my son and his wife that the cornbread would take longer to bake than what it said on the box. They were right. It was closer to an hour when I finally lost patience and hauled it out.

The Taste Test

As I said somewhere above, the cornbread came out great. The meat mixture, had it been eaten separately, might have been fine, too. The problem was eating it together. The sweet of the cornbread overwhelmed whatever the taste of the meat mixture was. I ate all of mine, but I did not go back for seconds.

There ended up being about half of it leftover, which rarely happens, even when the food I've made is deemed meh. My wife flat out told me no one was going to take it for lunch, but defiantly, I wrapped it up in foil and put it in the fridge. It made it easier to throw away the next day.

Lesson Learned

There's a reason why I don't like to cook that much, at least for more than me and maybe my wife. This is one of those times. It's been a few weeks since I cooked this dish, and I put off writing about it simply because it was going to be a downer, no matter how I dressed it up.

The moral to the story for me is, if I'm going to follow a recipe, don't change it into something that it's not. Sorry, Ms. Witherspoon.

@glenalbrethsen, I know exactly what you mean. I don't use Jiffy cornbread mix at all because of the sweetness. I made a tamale pie that called for Jiffy as the cornbread topping, but I use my own cornbread recipe and it was delicious. Your dish looks good, scrape the topping off and eat it separately. lol

Yeah, that's kind of what i did to get through it. Famous Dave's must be as bit as sweet as Jiffy's. The recipe actually called for adding things to the cornbread mix, too, which I didn't do, because people in my household don't like bits of corn by themselves. :)

Glen, this is great. I love how you share your learning experiences along with your cooking triumphs. It really is a learning experience for us too. Noted, no corn bread baked on meat= no bueno. I bet you could tweak this recipe a bit to be a non sweet bread that would bake beautifully over that meat… I’m glad you’re still at it in the kitchen. If I told you that I have many failed meals in a couple months would you believe me? It’s par for the course and the quickest way for us to learn. Well, that's all very kind of you, @puravidaville. I keep trying to get out of it and you keep giving me reasons to continue. :)

I think if I ever do it again, I will just follow the recipe, or at least use some chili recipe instead of whatever it was I was doing. That's the real need as far as this particular food goes.

I'm sure everyone who spends any time cooking has their failures. That's bound to happen because we're all human and we're not perfect at all that we do. In my case, my failures and triumphs seem to get amplified because I have one shot a week at it, and sometimes not even that. Which is fine, really. :) It is what it is.

That’s right, it is what it is. I bet the chili would have been bomb. This week I made up a falafel recipe out of cauliflower which turned out delicious but the hummus I made to go with it was an epic fail. That was made from cauliflower too and I omitted the tahini since I can’t really have it right now. I guess it tasted alright but I couldn’t get the sweetness of the cauliflower out no matter how many spices I used and the texture wasn’t as creamy as I would have liked. Needless to say the leftovers are still sitting in our fridge. I’ve tried convincing Dandays to eat it with some tortilla chips a few times but politely disregards and makes a PB&J instead. I suppose tomorrow it’s going in the trash. But I never would have none that cauliflower hummus without tahini would not be good if I didn’t try. Hey, and the falafel turned out yum so I’m even. Anyway, my point is that is peeps newer to the kitchen have to put in our dues like this in order to be the true chef rockstars we were meant to be. It just takes some trial and error. I’ll be looking forward to your next weeks contender :)

Good try! This reminds me that I have to try and make up for my last fail with my family! I have get some recipes to try something!

Well, thanks for the kind words, @newageinv. I think I'm off the hook this weekend, since we may be going to a spaghetti dinner our youth group is having. Otherwise, I'll have to come up with something quick. :)

There are plenty of recipes from the weekly entries to try, for sure. It's a matter of tastes, is all. :)

I know the solution... More Meat!! HaHaHa Good to have you in the kitchen like always. Even though this one might not have turned out I am sure you will always come back to the kitchen swingin'. I always remember adding honey to my cornbread because it wasn't sweet enough... maybe they changed the recipe IDK

It could be. Famous Dave could be from the south, where everything is sweetened up. :)

I'm not sure what I'll have next week, but as long as my wife is working and my son's family are here, I'm bound to be taking turns cooking. Sigh. :)

hahahaha... put that cornbread away and let's have the meaty thing.. but, too late, the sweet taste must be a bit down to the meat too. I can not imagine how sweet is the cornbread @glenalbrethsen.. never have one too.

thanks for sharing you experience on cooking experimental recipe too, I never failed on any of my first try, but I will fail on the second and the third.. LOL, So.. I will learn from this and be more careful in the future .. to not combined the cornbread and meat like yours. I also posted my failed recipe on blockchain, but I always find a safe recipe to show off on steemit.

I think the takeaway here is, the recipe called for one thing, chili, which goes quite well with cornbread, together or separate, while I created something else, which normally tastes really good, but in this case was overwhelmed by the sweetness of the cornbread. What's funny is, cornbread doesn't always come off tasting that sweet—but when it was combined with the meat mixture I made, you could definitely tell. It overwhelmed it.

So, anyway, lesson learned and on to the next thing, I guess. :) I'm glad there was something for you to learn from it. :)

haha! Howdy sir Glen! so you destroyed Reese Witherspoon's recipe! lol. It called for cornbread over chili which sounds wonderful. Well all you gotta do is do it right next time and see if it's all it's cracked up to be! her's DOES sound darn good!

Yeah, I think I'm going to wait a few more weeks and try it again. I was feeling like cornbread, just not chili. Next time, though, I'm going for it. :)

sir Glen, yes try it again and makes us all envious! I've had it before and it was awesome so this is a good reminder to make it. Isn't that what Shepard's Pie is? I don't think I've ever had that but pictures of the Shepard's Pie always look good too.

I guess in a sense Shephard's Pie is like this other. You have some kind of meat mixture you put on the bottom, but instead of cornbread on top, it's mashed potatoes. Definitely different flavors, textures, etc. Had I made another Shepherd's pie, it would have turned out better. :)

True story, Sweet Home Alabama is one of my all-time favorites, as soon as you said Reese Witherspoon—you had me! Yup... dandays likes chick flicks.

I’ve often wondered how many of these recipes on Friday are busts—nobody wants to admit when their dish sucks, they’re just like “run it!” I’m not the only one who nails a meal maybe 2 out of 5 times, everyone messes up something, somewhere, except for on the blockchain... uhm, got it! 😉

Well, I figure I got to keep it real in reality, @dandays, since I spend so much time in my head imagining things that aren't reality. I guess this keeps me grounded. And even though it took me a few weeks to write this post, I don't mind at all telling about my mistakes, goof ups and so forth. I've literally got nothing to prove here, and I suppose, that makes my kitchen tales a bit more unique. :) Until everyone starts doing it.
