Escarole (Cichorium endivia) is a plant widely used in the preparation of salads. This has a slight bitter taste. It is possible to find it with curled or smooth leaves. It is rich in potassium, iron, phosphorus, calcium, vitamin C and A, and is rich in water, which makes it ideal for incorporating it in diets to lose weight.

Escarole cultivation

To start cultivating this vegetable you have to consider the following:

Soil: this plant prefers clay soils with a lot of organic matter. It prefers acidic rather than alkaline soils.

Climate: Escarole supports cool climates, however, you can use colder temperatures.

Germination: the seedlings should be planted in seedbeds and then transplanted (between 30 and 35 days). These can be arranged in rows with 30cm between each one.

Irrigation: during the first days of planting the plant must be kept moist. Interdiaries must be watered (every other day). Considerable in the morning hours or towards the end of the afternoon.

Collection: the crop of escarole can take between 80 and 150 days. You can cut the individual leaves or the crown to get it to sprout again.
