涼蝦
相信許多人聽到“涼蝦”,一定會認為是紅紅的我們常吃的蝦子吧。其實不然,我所講的涼蝦是由大米做成蝦米形狀的一道甜品。
雖然涼蝦原產於湖北宜昌,但在大理也十分盛行。是一種十分常見特色小吃。在大理的街頭隨處可見有賣。
它入口時滑糯清爽,柔軟清甜。是用大米制漿煮熟,用漏勺漏入涼水盆中而成。因頭大尾細形似蝦,故此得名。
涼蝦的由來還有一個美麗感人的傳說:【相傳很久以前,宜昌南津關的長江邊居住著一戶彭氏母子。一年冬天,大雪紛飛,年邁的母親病了,很想吃一口河邊的小蝦。兒子聽後便冒著嚴寒來到河邊,想給母親撈蝦。到河邊才發現,河面早已結冰,不管他怎麼用力也敲不開冰面。心急之下他索性解開衣衫,躺在冰面上用身體融化冰面。沒多久,他昏過了去。在夢裡,一個白鬍子老者對他說:你不是要蝦嗎?我教你……小夥子忽地醒來,飛奔回家按老人的方法做好小蝦,一口一口喂母親喝下,母親奇蹟般甦醒過來。後來,小蝦製作方法在民間流傳開來,人們稱之“彭桂花涼蝦”或“孝子涼蝦”。】
每次在街上,遇上有賣涼蝦,總是要買上一份,看著賣涼蝦的大媽把涼蝦盛到小盒中,就像真的小蝦在盒中自在地遊走一樣;而後又放入兩勺或三勺紅糖(冰糖)水,已經急不可待了,吃到口中,香甜軟嫩,又冰冰涼涼,真是解渴佳品。
