FLAVORS OF HOMELAND

Today I will start a series of posts called FLAVORS OF HOMELAND.

I will explain the reason, I was born in Portugal a country rich in its gastronomy for its wide variety from the culinary of the mountain villages of the north and center to the south with Mediterranean influence and so much to my liking. But I'm living in Brazil and I feel a certain homesickness, I say more, I really miss the good food and snacks of my land.

Americans solve everything with the word food. Among us, the finest thing: comida, paparoca, codorium, cibo, alimento, sustento ... The Portuguese, observed Master Aquilino Ribeiro, has a stomach that is not even smithy.
But it's not a glutton. On the contrary, it pushes us appetite for the snack, for the good chunks, served in small, varied quantities, which allow us to mop up some fine wine glasses. Wines and snacks, always shared, that make being together a feast, that make our senses happy, loosen our tongue and open our hearts. "

I will present the recipe for one of my favorite soups taken from this book.

Tomato soup

10 ripe tomatoes
2 tbsp olive oil
1/2 cup of milk
1/2 teaspoon curry
chili
English sauce
1 onion
1 teaspoon mustard

Chop the onion and sauté in olive oil.
Add the peeled tomatoes, mash without
peanuts, milk, english sauce, curry,
the pepper and mustard, and mix well.
Bring to a boil and serve immediately.

SABORES DA MINHA TERRA

Hoje vou começar uma série de postagens que se chama SABORES DA MINHA TERRA.

Vou explicar a razão, eu nasci em Portugal um país rico na sua gastronomia pela sua grande variedade desde as culinárias das aldeias serranas do norte e centro até ás mais ao sul com influencia mediterrânea e tão do meu agrado. Mas estou a viver no Brasil e sinto uma certa nostalgia, digo mais, sinto mesmo falta das boas comidinhas e petiscos da minha terra.

Quatro verbos que são um programa de vida. Provavelmente nenhum outro idioma deste nosso mundo terá um tâo grande número de palavras relacionadas com o ato de comer, saborear, degustar, provar.
Os Norte-Americanos resolvem tudo com a palavra food. Entre nós, a coisa fia mais fino: comida, paparoca, codório, cibo, alimento, sustento... O português, observou mestre Aquilino Ribeiro, tem um estômago que nem fole de ferreiro.
Mas não é um glutão, um comilão, um alarve. Pelo contrário, puxa-nos o apetite para o petisco, para os bons bocados, servidos em pequenas quantidades, variados, que nos permitem enxugar uns copos de vinho capitosos. Vinhos e petiscos, sempre partilhados, que fazem do estar juntos uma festa, que nos alegram os sentidos, nos soltam a língua e abrem os corações."

Vou apresentar a receita de uma das minhas sopas preferidas retiradas desse livro.

Sopa de tomate

10 tomates maduros
2 colheres de sopa de azeite
1/2 chávena de leite
1/2 colher de chá de caril
pimenta
molho inglês
1 cebola
1 colher de cafe de mostarda

Pique a cebola e leve a refogar no azeite.
Junte o tomate pelado, esmagade sem
grainhas, o leite, o molho inglês, o caril,
a pimenta e a mostarda, e misture bem.
Deixe ferver levemente e sirva logo.
