ULOG #9: Operation Egg Plant !!!
Hello fellow steemians,
I hope you are having a good time.
As you can guess from my previous post that I love to cook, but I crave it more when it rains outside.
Today, I will be sharing the recipe and photographs of the most loved dish among Indians popularly known as Baigan Bhartha (Mashed Egg-Plant).
It is basically a vegetarian dish which is prepared by mincing egg-plant over direct fire, which adds smoky flavour to the dish.
Here is the recipe:
Chop 2-3 tomatoes, slice 2-3 onions, 150 gm peas, 3 medium sized egg-plants (Baigan), corriander leaves, ginger and garlic if you like them.
Heat Egg-plant over direct fire or charcoal to add smoky flavour to it.
Leave them to cool down for a while.
Peel of the outer layer carefully.
Mash the egg-plant and add corriander leaves.
Now add 3-4 tablespoon of oil in a frying pan. Heat the oil for a while then add sliced onions to it and heat them till they turn little brown.
Add turmeric powder a bit, heat it for while and then add chopped tomatoes and heat it for a while on slow flame.
Now add spices (black pepper, garam masala, corriander powder), mix them. After a while add peas and then add mashed egg-plant. After that add 20ml of water to it and mix them well, heat it on slow flame for 5-8 minutes and your dish is ready.
Serve it with Raita (Curd mixed with chopped tomatoes and onions, with corriander leaves).

I have an odd relationship with eggplant. Sometimes when I eat it prepared certain ways it makes the roof of my mouth hurt and start peeling. Other ways of preparation do not do that. I don't know if it is an allergy or what. This looks amazing though, maybe it wouldn't be a problem for me.
yes i wont be a problem just heat it on direct fire and peel it off ..
