I have just reistered on EOS Authority but what concerns most is that anyone who know the account name can change the email address to suit them........is it not?
So a hacker can unstake and change the notification email address.......

No, you're fine.
You'll recieve email notifications.
Anyone who knows your account name can also be notified, but it's not important if other people are watching your transactions.
It's only important if they have your private keys, or access to an unsecured machine that is holding your private keys.
The best way to have your account set up is an OFFLINE OWNER private key safely hidden away, and an active private key for everyday use.
The only time you will need your owner keys is to "change the locks" on your active permission IF it ever gets compromised, which you'll know if your checking your emails from eos authority.
