Can you think of any examples of anime like that?
I can tell you that I think watching a romantic show is more interesting after. Will it be a romantic comedy though? I'm not sure. And if it is, it's often with a premise such as a couple just getting married or hooking up like you see in some western movies.
There are dramas starting like that, mostly in the shoujo genre. Sukitte Ii na yo. is an example. In general, such shows often have better romantic relationships because they can let them be rather than make them the crux of the show which leads to non-progress - see Spice and Wolf (and for most of the LNs they are a couple) as an example. Maouyu Maou Yuusha is a sort of example that works, as the relationship is RomCom level, but again, not the focus of the show.
Two RomComs that work like that I can think of are Chuunibyou, where they confess at the end of the first season, and then you have the second season. But like the next example, which is an anime RomCom starting in this maner, which is Tonari no Kaibutsu-kun (My Little Monster), the problem is that they revert after said declaration, due to not wanting to run out of steam, rather than using this opportunity to chart brave new land, for anime.
'I can't understand what my husband is saying' is an anime short series romcom about a couple that just got married (It is also normie propaganda). It's pretty good but each episode is only around six minutes (it's based on a 4-koma manga).
Yeah, I don't count shorts as that. It's more of a 4koma skit show than it is a RomCom in the way I really think of it.

This might fit the bill. It is a Shoujo. It starts when the couple meets in highschool and ends after they have a child. Personally I felt it was boring because after the couple was formed earlier on there was no romantic tension... there was nothing to look forward to. Like narratively speaking which plot elements can you have after the couple has been formed anyway?
There's nothing more boring than a successful romance story, however, a rocky relationship turning into successful romance could indeed be very interesting.
