The Medicinal Gourmet Cooking Collective: Blackberry & Beetroot Stir Fry

This week is the finale of the The Medicinal Cooking Collective challenge.

We've been asked to create recipes that support the health of our kidneys and bladder. In Chinese medicine we are guided to look to the element water and the color blue and black.

I know the idea of blackberries and beetroot might sound like an odd pairing but you'll just have to trust me on this one. This recipe was a feast for the eyes and belly. I am so pleased with how it turned out and can't wait to share it with you.

Before I get to the recipe I just want to thank @eco-alex for inspiring and encouraging me to stretch my culinary creativity when it comes to medicinal cooking. I have truly enjoyed participating in this series of challenges.

Today we gathered sun kissed beets, blackberries and other vegetables from the garden, tossed it in our cast iron pan and created a dish filled with drama. The black wild rice paired with the deep red beets, the dark blackberries and the hints of green felt a bit like plating up a piece of art work. It was so dramatic!

This dish was a pleasure to feast upon and was a delight for the eyes - not to mention it happens to be really good for your overall health and wellness and specifically good for supporting healthy kidneys and bladder.

Blackberry & Beetroot Stir Fry Recipe

Ingredients

Stir-fry Ingredients

  • a generous cup of blackberries
  • 2 beets
  • 1 small onion
  • 3 sticks of celery
  • a cup of peas
  • 10 fresh green beans
  • a small bunch of beet leaves, chard and other greens and stems
  • whatever other fresh vegetables you fancy!
  • ginger ( a thumb sized piece diced or grated)
  • 2 cloves garlic
  • Organic cooking oil (we used avocado)

Sauce

  • 6 Tbsp Soy sauce
  • 3 Tbsp Wine vinegar or fruit vinegar (We used raspberry)
  • a spoon of honey

Rice

1 cup of wild rice

Directions

  • Wash and chop up all the vegetables and greens

  • meanwhile get your pot of rice cooking. Wild rice can take a while to cook. It takes me about 30 minutes.

  • Heat a skillet or wok add some oil and toss in the onions garlic and ginger and sautée on low for a few minutes. This will infuse the flavours into your oil.

  • Turn up the heat, add the vegetables that need the longest cooking time (beets, green beans, etc) stir and sautée for about 10 minutes.

  • Mix together the soy sauce, honey and vinegar to make a cooking sauce.

  • Add the remaining vegetables, greens and blackberries along with the sauce. Sautée for a few minutes.

  • Serve steaming hot with wild rice and some extra sauce if desired.

Oh, man! This sounds soooo good! The ginger is the capper! I've not had wild rice in quite awhile, but the combination of ingredients is just exquisite!

I've been meaning to ask you if your ginger came back? I recall you had some issues? I would LOVE to grow ginger. That's on my list of things to figure out.

The wild rice really worked! I made way too much if it though so now I need to come up with some creative wild rice recipes. The fresh ingredients really do make the job of making tasty food very easy.

Yes, 4 of the 10 did come back up. They are still very small, don't know if I will get decent roots...

wow what a dish.. i cant even begin to imagine what this tastes like.. but it looks amazing... and fully kidney friendly!
