Subscribe: http://bit.ly/TanbayTV This is my first ever ‘Baking-with-Tanbay’ video, inspired by Lauras recent cooking video: https://youtu.be/DUbHXuI9r0c So I decided to make a very simple no-bake, strawberry lemon lime Cheesecake that is actually good for you as it’s free from gluten, dairy, eggs, soy and sugar!

Here are the ingredients:

Crust:
1 1/2 cups almonds
2 Tbs coconut oil
Pinch of salt
Dash of pure stevia powder, Erythritol or sugar substitute

Cheesecake Filling:
3 cups blanched almonds
2 cup raw cashews or more almonds
Canned coconut milk
1/4 tsp pure stevia powder to taste (see notes for sub)
17 Tbs coconut oil
1 Tbs vanilla extract
Pinch of salt

Lime Layer:
1/3 cup lime juice
2 Tbs lime zest
2 large handfuls fresh spinach

Lemon Layer:
1/3 cup lemon juice
2 Tbs lemon zest
1/8 to 1/4 tsp turmeric optional - for color

Strawberry Layer:
About 9 Strawberries
1/3 cup lemon juice
