Vietnamese Chicken Onion salad
After the traditional Tet holidays, in the refrigerators of many Vietnamese families there is always boiled chicken. To deal with this surplus of boiled chicken, the Vietnamese have created a lot of dishes, including this Chicken Onion salad.
Chicken is boiled with ginger, onion and a little salt to make the meat more flavorful.
Sliced onions are soaked in ice to keep the crispness and reduce the
pungent taste of onions. Minced carrots, picked onions mixed together with a little salt, lemon juice and sugar.
Finally, the chicken is shredded and mixed with onions, carrots and laksa leaves. The taste is fresh and nutritious!
