This super quick and easy BAKED DONUT RECIPE is OIL FREE, can easily be made GLUTEN FREE, and absolutely DELICIOUS (and healthy!)! We also share with you 2 different glazes (original & chocolate) to dunk your donuts in!

INGREDIENTS:
DONUTS:
1 1/4 cup all-purpose flour (or GF flour to make the recipe gluten-free)
1 tsp cinnamon
1/2 tsp nutmeg
1 tbsp tapioca starch
1 tsp baking powder
1 tsp baking soda
1/2 cup coconut milk (canned)
1 tsp vanilla
10 medjool dates
1 tbsp lemon juice

ORIGINAL GLAZE:
1/2 cup icing sugar
1/2 tsp vanilla
2 tbsp maple syrup
hot water to thin

CHOCOLATE GLAZE:
1/2 cup icing sugar
1 tbsp cocoa powder
1/4 tsp vanilla
milk to thin (about 1-2 tbsp max)
OR melt some vegan chocolate and dunk em' in!

INSTRUCTIONS:

  • Preheat oven to 350F.
  • In a food processor or blender add dates and coconut milk and blend until contents become a smooth paste.
  • In a large mixing bowl sift in flour, cinnamon, nutmeg, tapioca starch, baking powder, and baking soda.
  • Add vanilla, lemon juice, and date mixture and fold ingredients together. If dough is too dry, add a few splashes of coconut milk until everything is stuck together.
  • In a non stick or silicone donut pan, fill each until they are 3/4 full. Bake for about 10 minutes or until they pass the toothpick test!
  • Glaze the donuts about 5-7 minutes after being out of the oven, so they are still warm!

They're honestly soooo goood! I don't have an oven where I'm at right now but can't wait until I can make these again!

Do you think buckwheat flour will work? Or coconut flour, those are the ones I usually have at home for baking

I actually tend to stay away from both of those flours when I bake! haha So I've never tried. I don't like the taste of buckwheat (unless it's blended with another flour), and coconut flour always fails me because it holds onto moisture too much! I would recomnnd using oat flour if anything :)
