WHAT I EAT IN A DAY Vegan + Cruelty-Free GIVEAWAY! | Cook with Lunch Recipes Chefs

BREAKFAST: Smoothie

• 2-3 frozen bananas
• handful frozen cherries
• 3 blocks frozen spinach
• handful roasted hazelnuts
• handful raw cashews
• 2 heaped tsp cacao powder
• handful of rolled oats
• water to desired consistency

LUNCH: Spaghetti + Meatballs
Meatballs:

• 1/2 cup black beans
• 1 cup brown lentils
• 2 tbsp olive oil
• 1 cup almond meal
• 1 flax egg (3 tbsp water + 1 tbsp flax meal)
• herbs, paprika, garlic, salt and pepper as desired
  Sauce:
• 1/2 tin crushed tomatoes
• 4 fresh basil leaves
• herbs, paprika, garlic as desired
  Parmesan:
• handful of cashews
• sprinkle of nutritional yeast
• pinch of salt
• pinch of garlic
  (served on gf pasta)

DINNER: Sweet Potato + Broccoli Salad

• 1 sweet potato
• 1 bunch of spring onion
• 2 x garlic cloves
• 1/2 head of broccoli
  Dressing:
• 2 tbsp vegan aioli
• 1 tbsp dijon mustard
• splash of almond mylk
• juice of 1/2 lemon
  All served with a bed of spinach, 1/2 an avocado, cashew ricotta (recipe coming soon), cashew parmesan, sesame seeds and sunflower seeds.
