I love Baker Creek seeds! I call their annual catalog my "seed porn" and spend months looking through it each year. Did you know that if you go to Jamaica, they serve a greens they call "callalloo" and it's actually amaranth? It's one of my favorite greens. I am not very interested in the seeds for eating but some folks love them and use them similar to millet or other tiny grains.
