RHUBARB MUFFINS - VIDEO

These delicious Cinnamon & Rhubarb muffins have a touch of tartness and sweetness from fresh rhubarb.These fabulous muffins have a crunchy sweet sugar topping and are great with tea or coffee. This recipe makes 12 muffins. What a pleasure it is to set out a basket of these rhubarb muffins, although the basket doesn't stay full for very long! They keep well for several days and stay soft and moist inside, just simply amazing!

Ingredients :

160g OR 1 cup + 2 tbsp of plain flour
1/2 teaspoon bicarbonate of soda
1/2 teaspoon baking powder
pinch of teaspoon salt
100 gr OR 1/2 cup dark brown soft sugar
1/4 cup OR 60 ml vegetable oil
half egg ( mix one egg in a cup , and pour half of it )
1 teaspoon vanilla extract
110 gr or 1/2 cup of buttermilk
100 gr OR 2-3 stalks of diced rhubarb
30 gr or 1/4 cup of chopped walnuts
1 tablespoon melted butter
3-6 tablespoons caster sugar
1-2 teaspoon ground cinnamon
