◢发面千层饼

分享不用揉面的千层饼的方法,做出的饼不仅可以层次分明,而且凉了也不硬~

食材:主面团:普通面粉300克,鸡蛋1个,水160克,酵母3克,盐2克,糖5克,食用油适量、葱花适量

油酥:普通面粉20克,盐2克、花椒粉1克(或者自己喜欢的五香粉、十三香等,也可以忽略不放)、食用油20克

1.将所有主面团所需的食材用料混合,因液体含量稍多些,我们可以借用筷子将其搅拌,最后手上抹点食用油,将面团进行整理一下

2.制作油酥:将除了食用油外所有食材混合放入容器中,食用油将其烧热,浇入到容器中,搅拌均匀,放凉待用即可

3.整理好的面团盖好盖子或者保鲜膜进行室温发酵,发酵至原来面团约两倍大

4.发酵好的面团,拉开面团,里面呈均匀的蜂窝状态

5.案板上撒适量干粉,发酵好的面团不需要揉面,直接摊放到案析上,用擀面杖将其擀成大长方形面片

6.将擀好的面片上面,均匀的抹上前面做好的油酥

7.喜欢吃葱香味道的,还可以提前将葱花放点芝麻,放适量盐混合一下,然后同样均匀的洒在擀好的面片上面

8.从一端用刀将两头分别切开一下,注意,切开的部分正好是整个面片宽度的三分之一即可,然后将其朝中间对折

9.将切开的另一边也同样向中间对折,压在上面步骤中折叠的面片上

10.将上面折叠好的向右侧方向,正好在中间位置折叠过去,然后同样用刀在其两端切开,按照我们折叠的面片来切即可

11.以此类推,将整个面团全部折叠包裹好,用擀面杖将其擀圆擀稍薄一点,厚度约1.5厘米左右

12.煎烤机提前预热,选择馅饼功能,底盘刷层底油,将其擀好的饼胚放入

13.选择好功能后,机器会自动运行,时间到后,直接翻面,已呈现均等金黄色

  11. By analogy, the whole dough is folded and wrapped, and the rolling pin is slightly thinner with a rolling pin, and the thickness is about 1.5 cm.

  12. The grilling machine is preheated in advance, select the pie function, the bottom layer of the base brush, and put the cake into the cake.
