I do "micromanage" my plants when I've got such a small crop, yes. Any damaged bits are removed, any unwanted side stems, etc.
One reason for this is I grow without fertilizing. There's some organic sphagnum moss, perlite, and some worm castings I gathered off the lawn. So their growth is slow but steady. I started them in January and I'm hoping to stretch out their "early summer" for at least another month. Then they can go out on the patio in the summer heat :)
It's not totally ideal but I'm enjoying it and learning lots.
