FOOD FIGHT: YOU STARTED IT (RICE PUDDING RECIPE)

Rice pudding is an American classic. Served at diners, parties and big events. Who’d ever thought such a weird combo of ingredients would make your taste buds explode, (that’s if you like rice pudding). There are so many different spins on this desert, that it’s even difficult to pin down where this tasty desert first got its start.

Since, the British are widely known for pudding pubs and mixing this sweet desert with what of all things, hmmm ‘sausage?’ Yes, they season the sausage with savory spices, make a slit in the sausage and serve this creamy desert in the middle of the sausage WITH RASINS. However, you have Iran, throwing saffron in the mix of ingredients and across the table in this never-ending food fight. Then you have many food bloggers giving the credit for this tasty treat over to China, since this country has a long history of producing rice. Whatever the case maybe, there are so many takes on this classic treat, that just about every country has its own version.

Let’s keep this food fight going with Puerto Rico’s recipe to this globally loved desert.

PUERTO RICAN STYLE RICE PUDDING RECIPE:

INGREDIENTS:

• 1 Cup of Rice Organic White Jasmine Rice

Thrive Market offers a great selection of organic rice. Specifically, I prefer to use the Jasmine rice for this recipe, because when cooked the rice smells delicious and there is a slight sweetness to this rice, which compliments the rest of the ingredients (mainly, the coconut milk and ginger) well and the variety of health benefits too. available on Thrive Market, is good choice.

• 1 Cups Water (Filtered Tap Water is Doable)

• 1 Can of Lite Organic Coconut Milk

Another great find I on Thrive Market is Thrive Market's brand of Organic Lite Coconut Milk.

• 1/2 Teaspoon of Pink Himalayan Sea Salt

As you may already know sea salt is better than traditional salt, which is why I'm going with a Himalayan sea salt. This salt is great, comes packaged in a shaker and is finer than traditional thicker sea salts.

• 2 cinnamon sticks

You can choose to go with already ground cinnamon, but anytime a recipe calls for cinnamon I always prefer to grate some fresh cinnamon. Thrive Market Organic Cinnamon Sticks.

• 2 Fresh Peeled Ginger Slices

You can also use ground ginger for this recipe, but again I think the fresher the ingredients the better the taste. You can easily find ginger at your local grocery store or the farmer's market.

• 6 whole cloves

You can also find this at the local supermarket or farmers market.

• Pinch of Nutmeg

Again, you can go with already ground nutmeg or you can head over to the local farmer's market and grate your own for this recipe.

• 1/2 Cup of Organic Cane Sugar

Sugar is always sweet. So, I would go with a half a cup and taste as you go along in the recipe, until you've reached your desired flavor and of course what rice pudding doesn't call for raisins, which are naturally sweet. • ½ cup raisins

DIRECTIONS:

I tend to use left over rice with this recipe, because it saves time and money. I just add water to already cooked rice enough to barely cover the rice. Let the rice soak for an hour. Drain the rice. Add the rice to a pot, add the water, coconut milk, cloves, cinnamon, ginger, sugar, salt, nutmeg, over medium to high heat and reduce to low heat. Mix and add in the raisins until all the liquid has been absorbed by the rice. Let the rice sit until cool and refrigerate until the rice pudding is cool and serve. Optional garnish with cinnamon.
