Ingredients:

1 cup wheat flour
1/2 cup gram flour (besan)

1 tablespoon chopped green chilies
1 teaspoon carom seeds (ajwain)
1 teaspoon cumin seeds

Instructions:

In a mixing bowl, combine the wheat flour, gram flour, maize flour, semolina, chopped coriander leaves, chopped mint leaves, chopped green chilies, carom seeds, cumin seeds, turmeric powder, and salt. Mix everything well.
Gradually add water to the flour mixture and knead it into a soft dough. The amount of water required may vary, so add it gradually to achieve the right consistency.
Cover the dough with a damp cloth and let it rest for about 15-20 minutes.
After resting, divide the dough into small portions and roll them into balls.
Take one ball of dough and dust it with flour. Roll it out into a circular-shaped roti using a rolling pin. Aim for a medium thickness.
Heat a tawa or griddle over medium heat and place the rolled roti on it.
Cook the roti on one side until you see small bubbles forming on the surface. Flip it to the other side and cook for another minute or until both sides are cooked and brown spots appear.
Apply a little ghee or oil on both sides of the roti and cook for another 30 seconds, pressing it gently with a spatula to ensure it cooks evenly.
Remove the roti from the tawa and place it on a serving plate.
Repeat the process with the remaining dough to make more rotis.
