QURATOR'S TASTY TUESDAY WEEK AND WORLDSDAILYFOOD PHOTO CONTEST ENTRY - APPETIZERS and/or Soup
Hello Steemit friends! Here's my entry for today's theme. This is one of our native delicacies. It's called UYAP Ensalada or Shrimp Paste Salad. This preparation is very basic and a favorite dish of the rich and poor.
Ingredients:
1/8 kilo shrimp paste
1 pc. medium size bitter gourd or Ampalaya, thinly sliced
1/4 meat, sliced into cubes (optional)
Spices sliced into thin cubes such as garlic, onion, tomatoes, ginger, bell pepper and hot chili
1 tbsp brown sugar
Seasoning
1/2 cup vegetable oil
Sautee spices with cooking oil until brownish in color.
Add meat cubes until tender.
Add bitter gourd for 3 minutes.
Then push gently on the sides of the pan, forming a circle to let the oil settle at the center then pour the shrimp paste.
Mix well and add brown sugar until done.
Mix all ingredients. Serve either hot or cold.
The preparation will last for 3 days or a week, even without refrigeration (Optional)
It is best as an appetizer while taking your meals. More often than not, we pair it over cooked banana (not ripe)
