National dish and family traditions.

Good afternoon, dear friends Steemians ! We try to spend the weekend with our family. This is good when there is more time for communication, entertainment and common interests. Usually I try these days to cook favorite dishes , and today me pleasure to share an old tradition that is popular not only in my family.

In the world of cooking has long been known dish that consists of thin dough and toppings in its various versions. As a variation can be present any minced fish, meat, vegetables. In some peoples, this dish is a traditional national food. Khinkali, manta rays, sorcerers, ravioli ... All this has different names, different recipes and methods of preparation. In my country we say this name - pelmeni.

We know that this dish originally has Chinese roots. The dispute about who invented dumplings continues to occur even in our country there is disagreement about what peoples first rasprostranit this dish in Russia. Which of them were the first in our traditional cuisine: Uralskie pelmeni or Siberian? The history of this dish goes back to very distant times. And I think that is no sense now to look for the source because the pelmeni are so accustomed in our culture ,that we justly consider them one of the main dishes of Russian national cuisine.

This dish is firmly rooted in the culture and way of life of our people. According to tradition, was to mold pelmeni whole family. They were made in large quantities to have enough for all family members, then frozen for the long winter. The very name "pelmeni" appeared in the 19th century. Now it is very difficult to tell from what language it was borrowed. His translation means "bread ear".

But even our modern Russian food is difficult to imagine without this dish. Today is the day off and I gladly decided to tell and cook it for you, my friends. Each hostess has her own recipe for this delicious dish. We experiment with different fillings, ingredients and spices. Minced meat can be prepared from meat ( this is a traditional filling), mushrooms, fish, cabbage can be used.

It is the filling and serves as the main difference. If you are using beef, there is a need to add fat or pork is fatter and, of course, onion and crushed ice. This filling does not stick to the hands and pelmeni will be very juicy. The smaller the dumplings, the tastier they are. For example, in order to prepare a real Siberian pelmeni you must knead the dough from flour and water. Only so and no of salt. For example, in the indigenous Ural peoples filling consists of three types of meat : lamb, pork and beef - all in very strict proportions. Tatars use only mutton, Russian - beef and pork for filling. There are many recipes. Form of for dumplings, too, has great significance. Because that's what they got their name. It is also a tradition. In a thinly rolled circle of dough laid out filling, pinches on the edges and connect them in the form of a crescent. To cook the pelmeni , you want to boil water, salt it, add the Bay leaf and then throw themselves dumplings. If there is meat broth, which is cooked on a bone, then we can cook in it pelmeni and also serve them with broth. Refills to the finished dish can also be absolutely different: sour cream, butter, onion, garlic.

Dumplings for the Russian people is a real treat. And when we do them in the family circle, it's a double holiday. Because this product keeps the warmth of our hands and hearts. We prepare them with love. It's a very special taste. Our traditions are passed down from generation to generation. I always remember my grandmother's dumplings, I love my mother's dumplings, I try to follow this tradition too. It does not matter which of the Nations considers this dish their own. Most importantly, we are all ready to take care of old recipes and create new ones. All this in order that future generations could try it and tell: "Oh! What delicious dumplings! "

Добрый день, дорогие друзья! Мы стараемся проводить выходные дни в кругу семьи. Это хорошо когда есть больше времени для общения, развлечений и общих интересов. Обычно я стараюсь в такие дни приготовить любимые нами блюда и мне сегодня приятно поделиться одной старой доброй традицией которая популярна не только в моей семье.
В мировой кулинарии давно известно блюдо, которое состоит их тонкого теста и начинки в различных её вариантах. В качестве вариации может присутствовать любой фарш из рыбы, мяса, овощей. У некоторых народов такое блюдо является традиционной национальной едой. Хинкали, манты, колдуны, равиоли ... Всё это имеет различные названия, различную рецептуру и способ приготовления. В моей стране мы произносим это название - пельмени.
Нам известно, что это блюдо изначально имеет китайские корни. Спор о том кто придумал пельмени продолжает возникать и даже в нашей стране возникают разногласия о том, какая из народностей первой распространила это блюдо на территории России. Какие из них появились первыми в нашей традиционной кухне: Уральские пельмени или Сибирские? История этого блюда уходит в очень далёкие времена. И я думаю, что нет смысла сейчас искать первоисточник потому, что пельмени настолько вжились в нашу культуру, что мы по праву считаем их одним из главных блюд русской национальной кухни.
Это блюдо прочно вошло в культуру и быт нашего народа. По традиции было принято лепить pelmeni всей семьей. Их делали в больших количествах чтобы хватило всем членам семьи, затем замораживали на всю долгую зиму. Само название "пельмени" появилось в 19 веке. Сейчас очень трудно сказать из какого языка оно было заимствовано. Его перевод означает "хлебное ухо " . Но, даже нашу современную русскую еду сложно представить без этого блюда. Сегодня выходной день и я с удовольствием решила рассказать и приготовить его для Вас, мои друзья. У каждой хозяйки есть свой рецепт этого вкусного блюда. Мы экспериментируем с различными начинками, компонентами и специями. Фарш может быть приготовлен из мяса ( это традиционное наполнение), можно использовать грибы, рыбу, капусту...
Именно начинка и служит основным различием. Если вы используете говядину, то здесь необходимо добавить сала или свинины пожирнее и, конечно, лук и колотый лед. Такая начинка не прилипает к рукам и пельмени будут очень сочными. Чем меньше пельмени, тем они вкуснее. Например для того чтобы приготовить настоящие сибирские пельмени необходимо замешивать тесто из муки и воды. Только так и никакой соли. Например у коренных уральских народностей начинка состоит из трёх видов мяса : баранина, свинина и говядина - всё в очень строгих пропорциях. Татары используют для начинки только баранину, русские - говядину и свинину. Рецептов существует множество. Форма для пельменей тоже имеет большое значение. Ведь именно за неё они и получил своё название. Это тоже традиция. В тонко раскатанный кружок из теста выкладывается начинка, защипы по краям и соединяют их в виде полумесяца. Для того,чтобы сварить пельмени, требуется вскипятить воду, подсолить ее, добавить туда лавровый лист, а затем бросить и сами пельмешки. Если есть мясной бульон , который сварен на косточке, то в мы можем сварить в нём пельмени и также подать их с бульоном. Заправки к готовому блюду могут быть тоже абсолютно различные: сметана, масло, лук, чеснок.
Пельмени для русских людей – это настоящий праздник. И когда мы их делаем в кругу семьи, то это двойной праздник. Потому, что такой продукт сохраняет тепло наших рук и сердец. Мы готовим их с любовью. Это совершенно особенный вкус. Такие наши традиции передаются из поколения в поколение. Я всегда помню пельмени моей бабушки, я люблю пельмени моей мамы, я стараюсь тоже следовать этой традиции. Совсем неважно то, какая из наций считает это блюдо своим. Самое главное, что все мы готовы беречь старинные рецепты и создавать новые. Всё это для того, чтобы будущие поколения могли его пробовать и сказать: " Ах! Какие вкусные пельмешки! "

Dumplings are yummy and your receipt looks so warm but so refreshing at the same time, I've never thought about the posibilites that opens on dumplings but you've opened my eyes as you did with the fried eggs receipt.

Wow! Thank you, my friend! I'm glad to see you again. I'm glad you liked my story, too. Yes, this picture from the USSR. An old chronicle. It gives an idea of how it really was. They did so much, then they all froze. Then at any time you can get the required amount and just boil it. This activity allowed the whole family to spend time together, to communicate and it also helped to strengthen the family and made them closer. It seems a little primitive, but it's life. I also wish you a positive and productive week.

We did such things when I was a child, there was a lot of fun messing around while my mother made the dough...nice times while a family can keep together.

This one of the very few meals that I truly miss since I stopped eating meat years ago! I’ve tried only pelmeni with meat, they are so so good! пирожки с картошкой is my other favorite Russian meal :)
