This looks so amazing! Gorgeous Monastery and I more and more feel Crete is a place worthy of a (many) visit :D But... How does the olive oil taste?

Now, the taste of the fresh olive oil is quite hard to describe, probably because it is like nothing else. I could say that it resembles a very oily vegetable juice. The first weeks it is a thick light green liquid with a very distinctive smell and a very "fresh" taste. Gradually the sediment goes to the bottom and it becomes the clear olive oil we all know. If you ever find yourself in an oil producer area during the harvesting, you should definitely try it out!
