Huge fan of coconut too- I have added fine dessicated coconut to the shortbread recipe successfully (along with cacao to make Romany Creams, a South African cookie staple) alternatively am sure a little coconut oil to replace some of the butter wouldn't do any harm either! Still getting the hang of the photography side of things, so happy to hear they're looking ok!
