Vegan Mediterranean pizza
Simple is what pizza is all about. So how about not doing a sauce. Oven Roasted Tomatoes. Placed on top of a pita. Then toss in some Brussel spouts pulled of leaves. Topped with artichoke hearts and peppercinis. This little vegan treat was my first attempt and very hearty. I gave my lady cheese and it looks much more traditional. Either way a meatless treat for a easyish meal.
Diced quarters of Tomato
Add in brussel sprouts leaves and garlic and rosemary to taste.
Vegan Layer on the tomatoes and sprouts.
If you must have the cheese add it with tomatoes then build.
Either way you are left with a pizza what satisfies. We had ours with beer and wine respectfully. Which is what can set any night off just right.

"Easyish" does the trick on busy days. And "easyish" can mean delicious food anyway as your pizza looks like.
