Summer Roll Vegan Raw except sauce
For our first event at QC Social we displayed some of our small plates as passed appetizers.
This mostly raw vegan wrap encompasses flavors from the Charlotte area farmers and will be a seasonally changing dish we will be displaying. The bright crisp flavors of the veggies went perfectly with the semi sweet sauce.
The wraps were rolled tight by those with much more precision than I. Then cut in half and touched with the sauce. Placed on small plates and passed.
Ingredients
- Rice wraps
- lionsmain mushroom
- garlic scapes
- cucumber
- carrot
- sorrel
Sauce
Is a charred pineapple simple blended with ginger then added in corn syrup and seasonings to thinken and flavor.
Pairing
We looked at this dish to be paired with whites. Rather our chenin blanc or a sparkling im which cava or prosecco worked

I love those wraps. They're so refreshing and light with a beautiful sweet/sour sauce. The various textures from the wrap all the way to the crunchy veggies inside is so enjoyable. It's totally a great option for passed appetizers.

Really nice summer roll! I love lion's mane mushroom but never had them raw. Your roll is filled with nice strong flavors from garlic scape to sorrel. The sweet and spicy sauce sounds great too. Thanks for your entry!
