CookwithUs Soup on a Budget.
Soup again. Said No One this chilly fall.
So I work in the food industry, and have been on a hella budget this past year. After a busy night of work we had left over baked potatoes. I took two home with me and had to make do.
Ingredients
- Two Baked Potatoes
- One Cup Veggie Broth
- Two Cups Soy Milk
- Half Onion
- Two Serrano Peppers
- Salt, Pepper, Garlic Salt, Celery Salt too taste
Bake your potato a second time. Then Puree with milk, stock and seasonings. 
- Simmer for 20 minutes and then add onion and peppers. Simmer for additional 15 minutes then enjoy
Personally I like a bit of chucks in my soup so I added bread crusts toasted. Then Topped with fresh arugula and a bit of coconut cream ranch. The Fresh Arugula is Crucial to the taste. The raw crunchy greens mixed with the soup is a touch of vegan happiness.
I will not turn down a daily bowl of soup, either! Especially potato soup! Yummy. 😋
Soup is always one of the go to budget meals for me,. And especially using the veg that's starting to wilt after a week before my next shop. Your one looks very delicious!
Soup again is totally fine! And this is simple yet delicious. It looks like it has a nice, thick consistency. The coconut cream ups the taste plus the fresh arugula gives the soup added dimension, flavor and texture.
