First attempt at vegan Ice cream

So simple I cant believe I haven't done it before. Actually, It is cheaper for my rare cravings to just get dairy free from store. But happy I attempted. And my GF was very happy for my attempt. Came out dead on.. on flavor. Texture failed for her non vegan life.
Ingredients were simple.
- Blueberries
- Coconut milk
- Coconut cream
Simply remove clear liquid from bottom and puree with fruit.
Remove and Freeze. Best after 4 hours in my opinion.
I topped with honey and strawberries here to stay vegan.
Now this was made for my girl for a snack. She does not usually go vegan but we are getting in better shape for a family/beach vacation. So healthy is her kick for next two weeks with me. Hooray for finding flavor in fruit and creaminess in Coconut milk. Something everyone can enjoy.

Glad you enjoyed this venture. You're right about getting a nice flavor from the fruit and a creamy texture from the coconut milk. Not so bad for a healthy option.
