Beautiful layers with many different flavors! It certainly is something you'd be sure to get with the variety of root veggies you chose to include in your gratin. I also like that you incorporated a couple kinds of cheese. The chipotle one sounds interesting! And I love the crunchy texture of the herby breadcrumbs to top the dish!
