Cook With Us #29 - Anything wrapped - bRoc-Chick Parcels
We thankfully had just wrapped up our lunch when I heard that the dreaded loadshedding is back today!
Loadshedding I hear many ask; well that is when our country's power utility turn off the lights area by area or block by block, according to a schedule.
Why do they do this?
Because the power utility Eskom messed up big time due to large scale corruption and incompetence, so now our country is faced with a power crisis.
Thankfully our area somehow is spared from most of the loadshedding but it affects everyone else around us.
I'd prepped everything for my bRoc-Chick Parcels the night before and got them baked just in time for lunch, so I could sit back and relax without fearing for lights out!
Crispy Phyllo Pastry parcels filled with a Broccoli, Baby Leeks, Chicken, Bacon, Yogurt and Mint filling; inspiration that I got from an awesome local foodie magazine called freshliving which is given out by one of our large supermarket chains Pick n Pay.
The recipe came from their 'Everyday Heroes - Prep School', but I gave it a twist by adding Bacon. Their food styling and recipes are super amazing, mine pales in comparison, but I often prepare our weekdays meals from here with an a-la-lizelle twist.
RECIPE
- 500 gram Phyllo pastry sheets
- 6-8 Baby Leeks sliced & sauteed in a little oil
- 2 cups Broccoli broken up
- 1 Chicken fillet cooked and sliced
- 2 rashers Bacon fried crispy and diced
- Fresh Mint & Dill chopped
- 1/2 cup Greek style yogurt
- Mixed Seeds for garnishing
Mix filling ingredients together and season to taste.
Cut pastry into rectangles, brush with oil and layer 3 sheets on top of each other.
Place filling in one corner, roll up diagonally to make a parcel.
Brush with oil and scatter seeds on top.
Bake at 180C for 15-20 min or till golden.

Sorry to hear about the power crisis. My family often experienced rolling blackouts when we lived in Indonesia.
But it looks like you made the best fo things. Your lunch looks incredible.
