Cook with Us #12 - Cooking with Fire - Chicken and Sausage

Our clients from Macedonia arrived and I thought this was a good opportunity to get to know them by firing up the coals and cooking a meal that they could enjoy - overlooking our beautiful view.

We were out of our traditional "Boerewors" - translated means Farmer's sausage so I made kofta instead which is like a meatball taste but it's actually a sausage - although on the packet it said kebab - which to me is a misrepresentation. It, however, did taste very nice on the barbecue

Chicken breasts were soaked in a basting of olive oil, lemon juice, origanum and dried mint - salt and pepper (very Greek)

Served a great salad with it - using baby spinach leaves and rocket as the base and adding feta, olives, tomatoes and cucumber and some origanum

All in all it was a lovely evening and it was great getting to know the girls.

The food was pretty good too.

Need to start making some videos. Viewly has kindly donated some prizes to the cooking competition - so get your video's going - hopefully I'll give that a shot next time

Hey @leelektrik, Your guests are so lucky to have you cooking for them! I love that marinade that you made for the chicken. I do a similar one with with garlic that I mash to a paste and I'll use chopped fresh rosemary. The salad complements the grilled meats and makes this into a nice light meal. Thanks for sharing your bbq dinner and good luck this week!

Tasty! Your 'very Greek' marinade sounds perfect for the chicken. Simple yet flavorful. And the kofta (or kebab? haha!) looks delicious as well. Those, with a side of your fresh, crunchy greens is enough to make me happy.
