Raw Vegan Mushroom Ceviche

Ceviche is a salad that is made with fresh vegetables and seafood such as fish or shrimp and cooked in lemon protein.

I did what is the ceviche with mushrooms that are marinated in lemon for a few hours so that they take the flavor of the lemon along with the other ingredients so this is my version of raw ceviche vegan.

Ingredients

1 pack of mushrooms
1 avocado
1/2 onion
2 cloves of garlic
2 lemons
1/2 cup chopped mango
2 branches of celery
3 or 4 medium carrots
1 jalapeno pepper (optional)
3 tablespoons olive oil
3 tablespoons of apple cider vinegar
juice of an orange
2 tomatoes
2 tablespoons spinach pesto
salt of black garlic or pink salt

Steps

The spinach pesto was made by grinding spinach, some basil branches, some branches of parsley, 3 or 4 chives, two cloves of garlic, olive oil and everything to the processor.

We continue with the Ceviche

They are cut into small cubes all the vegetables are put in a bowl avocado until the end and all added is added the juice of the lemons of the orange oil and vinegar the pesto and left in the refrigerator for an hour and then the avocado is added at the end and ready to eat.
Very refreshing to eat as a salad on a bed of lettuce or spinach

I love the mixture of sweet and savory in there through the mangos and orange juice ☺️

This sounds delicious anyway, but that last close-up picture definitely got me drooling!

I love ceviche and your vegan ceviche is also a dish I would enjoy. It has a lot of different textures to it. The dressing of cider vinegar and lemon makes it nice and tangy but the addition of spinach pesto elevates the flavor profile.
