Here is my "Delicious Lemon Meringue Pie" for Guilty Pleasure Food entry kindly hosted @cookwithus :) @chefsteve, @pandamama and @offoodandart.

As you noticed this "Delicious Lemon Meringue", has sweetened condensed milk, as one of it's ingredients. The love for condensed milk, started many moons ago at boarding school, where it was a staple for midnight feasts and tuck boxes.

Lemon Meringue pies have been around for a long time and was very popular when I was growing up. If we were invited for a Sunday out, to a friend, many times this pie was served.

Because of it's popularity ...not a crumb was left..to the hosts delight!

Now it is popular in our house too when entertaining friends and family. :)

This recipe comes from a cutting, that I collected and printed out and is in my pudding flip file. I tweaked the recipe too so it is not exactly the same as the original one.

Ingredients -

1 x 225 mm baked biscuit shell / 1 pkt Tennis Biscuits or Marie biscuits - crushed
3 eggs separated
1 can sweetened condensed milk
1 tablespoon finely grated lemon rind
2/3 cup fresh lemon juice
6 tablespoons white sugar
3 tablespoons of melted margerine or butter
1/2 teaspoon cinnamon
1 teaspoon Vinegar

Method for Shell -

Crush one pkt Tennis or Marie biscuits finely with a rolling pin. Add the melted margarine or butter and the cinnamon.

Press evenly on bottom and up the sides of a greased baking dish. Bake blind for fifteen minutes at 175 C before putting in the filling.

Remove from oven and cool.

Method for Pie Filling -

Beat egg yolks until thick and lemon coloured. Fold in the condensed milk, lemon rind and juice and then pour into baked biscuit shell.

Beat egg whites and add sugar gradually, until it peaks. Add 1 teaspoon of vinegar and beat again for extra thickness. Spread meringue topping lightly over pie filling, using the back of a spoon, to form peaks.

Bake in a preheated oven at 175 C for 15 to 20 minutes or until lightly browned and filling set. Remove from oven and cool before serving.

It's so wonderful to see so many South Africans in this competition. I also come from S Africa - from Gauteng - but haven't been back in 5 years. Lovely recipe - both my oldest son and I love lemon meringue - so will definitely do a "myturn" on this when he gets back from Thailand @dianadee

Thank you! I use either..the marie biscuits are not as rich as the tennis biscuits. Yes, also from sunny South Africa..live in eastern cape, near St Francis Bay. @cookwithus
