Cook with Us #19 - Coconut fried rice
I stumbled on @cookwithus while reading through different attractive blogs on steemit. They organize a weekly contest
This week's theme is actually breakfast. My dish is rice. Nigerians eat rice a lot, it's our staple food; white rice and stew, white rice and curry chicken sauce, white rice and vegetables, jollof rice, tumeric rice, coconut rice, fried rice and of course coconut fried rice.
I particularly love coconut fried rice because it's like eating two different dishes at once, the rich coconut flavour and the fried rice taste, it's milky and delicious.
This dish is actually easy to make and doesn't take as much time as the name may imply, it is also a healthy meal as it is balanced. I forgot to take a picture of the ingredients😂
Ingredients
- medium sized coconut
- 2 milk cups of rice
- one medium size green pepper
- 3 medium size carrots
- green beans
- white onions
- spices and seasoning
- vegetable oil
- chicken stock.
How to
- deshell coconut and blend.
- sieve the blended cocunut, keep the shafts for other use. Keep the milky part as this is what will be used to cook our rice.
- dice and chop the pepper, carrots, beans and onions.
- parboil your rice with the milky coconut extract.
- stir fry your chopped vegetables, add seasoning, spices and chicken sauce.
- turn in your already parboiled coconut rice.
- allow to simmer and dry up.
- serve with fish/beef/egg and any drink of your choice.
You are good to go!

Fried rice cooked in coconut is so flavorful. It's a wonderful meal to start the day. I also love that it's easy to make.
