Good day my Steemit Friends! It’s time for another round of the Cook With Us Challenge! Week 17 and the theme for this week is Raw Foods!


I have really enjoyed exploring the field of raw food cuisine. When we think about nutrients which may be lost or diminished when heated, eating raw sounds like a wise choice! Great theme for the week! It will be fun to see what raw creations we see.


I would like to offer a big thanks to @chefsteve, @offoodandart and @pandamama for hosting this challenging contest. You have certainly created a wonderful community for talented Steemians!


This theme arrived at a perfect time. We are attending a dinner this weekend and I agreed to bring dessert. I love to bring new foods to share with ingredients many don’t realize can be used in desserts. This dessert has a few, and it's Raw!

Raw, It's A Chocolate Carmel Dream!

I Used

Crust

  • 1 cup Raw Almonds (soaked overnight and rinsed)
  • 1 cup Medjool Dates (pitted)
  • 1/2 teaspoon Sea Salt

Carmel Layer

  • 1/2 cup Organic Coconut Oil (melted)
  • 1/2 cup Organic Maple Syrup
  • 4 tablespoons Almond Butter
  • Dash of Sea Salt

Chocolate Layer

  • 3 cups Raw Cashews (soaked overnight and rinsed)
  • 2/3 cup filtered water
  • 2/3 cup Organic Coconut Oil
  • 2/3 cup Organic Maple Syrup
  • 2 teaspoons Vanilla
  • 1/2 cup Organic Peanut Butter
  • 1/4 teaspoon Sea Salt
  • 1/3 cup Raw Cocoa

Garnish

  • Fruit! I chose Fresh Strawberries, Slivered Almonds and Hemp Seed
    Serves 16

Let’s Prepare!

First the Crust!


Place the Almonds in a food processor and process until fine. Add Dates and Salt and process until well combined. Firmly press into a 10” Springform pan (you may use a parchment lined baking dish if you wish). Set aside.

Next the Carmel!


Place all Carmel ingredients into a food processor or blender. Blend until smooth. The Almond really adds to the Carmel taste! I think you’ll love it! Pour over the crust and distribute evenly.

Now the Chocolate Filling…


Process Cashews, Water, Oil and Maple syrup until smooth. Add remaining ingredients and continue to process until light and fluffy! Pour over Carmel layer. Freeze for at least 6 hours. Remove about 30 minutes before you wish to serve.

What a wonderful dessert! From the crust to the garnish, everything looks beautiful. I'm sure is tasted delicious too.
