When spring is coming, what kind of tart is coming up to you? Definitely strawberry tart, I assume. Sweet and rich strawberry and crisp tart shell. Strawberry tart is one of the welcoming present for visiting close friends and family. Spring breeze and sweet strawberry cheese tart would fulfill your heart with warmth!

-Ingredients

1 tart pan (18cm)
125g all-purpose flour
80g unsalted butter
45g sugar powder
8g vanilla flavored sugar
1/8 teaspoon salt
1 egg yolk
-Filling
100g cream cheese
35g sour cream or plain yogurt
35g white sugar
1/4 heavy cream
-Decoration
12~14 strawberries
50g blue berry

-Instructions
STEP 1) Put butter, egg, cream cheese, sour cream outside of the refrigerator before 1 hr to cook to make ingredients room temperature. Preheat the oven to 180℃.
STEP 2) Combine butter, sugar powder, vanilla flavored sugar using a hand blender on low speed until the powder disappeared. Add salt, egg yolk and blend again for 30 sec.
STEP 3) When the egg blended enough and salt completely melted, add flour and combine using a spatula. Wrap the dough in a plastic bag and let it sit for 30 min in the refrigerator.
STEP 4) Put baking sheet at the bottom. Dust a bit of flour and roll the dough thinly (about 0.3cm)
Place rolled dough on tart pan, press the edge to fit the tart pan, trim the edges.
Using a fork, prick the bottom of the shell, bake in the preheated oven for 12~15 mins. Set aside to cool.
STEP 5) Place cream cheese in a large bowl, blend with a hand blender. Add sour cream and sugar and blend again until sugar disappeared.
STEP 6) Place heavy cream in another bowl, whip with a hand blender. Take 1/3 of the cream and combine with STEP 5. Add 2/3 heavy cream and stir using a spatula.
STEP 7) Place filling into pastry bag, fill the shell evenly.
STEP 8) Arrange strawberry halves and blueberry to your preference.
(TIP. After washing strawberry and blueberry, completely remove the moist on the surfaces)
