It's time to make a broth. Old cooks say: if you can not make a broth, do not start cooking other dishes.

We have the fullness of spring right now. Lots of fresh vegetables, so it's the only time of the year when we can munch at will. Sometimes, however, especially in early spring, we can catch a cold and then broth comes to help.

Scientific research shows that among many natural treatments for colds, like onion, garlic or lemon, a broth is one of the most effective. It warms us up, provides vitamins and some fat. It also supports our body in self-healing. You can prepare a larger amount and freeze it. This will save time when you need it fast.

The broth is also a valuable base for soups and creams. The vegetables boiled in it acquire a stronger flavor and we do not need to use chemical bouillon cubes, with monosodium glutamate, a lot of salt and preservatives.

I wanted to prepare a broccoli cream. So for me, 1.5 liters of ready broth was enough to cook them into it. I'm lazy, so I bought a set of peeled vegetables:

Ingredients:

  • 2 liters of water
  • large carrots
  • a piece of celery
  • parsley root and leaves
  • a piece of cabbage
  • small onion
  • a piece of leek
  • a spoon of rapeseed oil

Spices and herbs

  • a few laurel leaves
  • a few black pepper seeds
  • half a tablespoon of salt (better less than more!)
  • a few seeds of allspice berries

After washing and cutting vegetables, I added everything to the pot with cold water, covered with a lid and went for a long walk...

Of course, I'm kidding... although my work is coming to an end. From time to time, I had to mix everything up. After 30 minutes of cooking, the wonderful smell of boiled vegetables started to rise in the kitchen.

Two hours later my broth was ready. Then he just had to strain and pour into the jar. I would need it in some days.

What to do with the remaining cooked vegetables? Do you have any ideas? Let me know in the comment!

Bon Appetit and take care of yourself :)
