DIY Sausage Stuffer

in #cooking9 years ago

So I've wanted to do my own venison sausage and slim Jim's for some time now, I've made them before but it's so frustrating without proper equipment I have attachments on my grinder but it really needs ground twice and at that point these little hobby grinders don't want to push a casing well.
What a person needs is a sausage stuffer so off I went to obtain one.

Doesn't it look pretty?

Well looks aren't everything it's flat junk, don't waste your money!

Back to square one, do I buy a better one or make one? The answer quickly became clear when I priced some higher end models, so off to the hardware store I went.

Here is all the parts I got that I didn't already have on hand 18 inches of 4 in pvc a fitting and a screw cap, a reducer a small piece of 3/4 and 12 inches of 1/2 in, a cheap cutting board and all the nuts and bolts to put it together including a wing nut and an acorn nut

These pics are pretty self explanatory except maybe the last one I place a bolt same size and thread at my all thread and fastened it with a wing nut then poured the cavity with acrylic to lock in the wing nut.

After cutting a disk out if the cutting board with a 4 in hole saw and fitting it by turning with a drill and using sandpaper/files to turn it down it is all ready to assemble.

And after borrowing a crank handle from an old honey extractor it's ready for use, it is very long winded so I'll probably double nut the shaft and get a bit for my drill to run it in, but it will work for now

I hope you enjoyed this post, I have meat thawing out now and will have some slim Jim's made up in a few days if you want to see how that turns out please like and subscribe.

thanks Shantam hows the bees doing?

Thanks for asking. All to bed for the winter. Next time I look will be in February to plan for march feeding. Into winter chores and adventures. Skiing Brewing beer and working on it web component.

Same here been focused on hunting for the most part

Have not had the need to hunt directly. The last time I hunted was in the late 70s. I was living with some native brothers at the time. I learned about the gift and the acceptance of of the gift of the animal physical and otherwise.

Will be interested to see how this performs.

What are Slim Jim's? (sorry I am in the UK)

Smoked Meat sticks about 12 mm wide like summer sausage but smaller

Necessity is the mother of invention. Where I am it is difficult to get tools or equipment to do the job so many times we build our own. They may not look pretty but the get the job done and don't cost an arm and a leg. Looking forward to the post on Slim Jim's.
