My version of adobo-inspired, Pork Binagoongan dish with a twist!

Pork Binagoongan is also called Binagoongang Baboy , it is a pork stewed and sauteed in shrimp paste (bagoong - alamang in Tagalog). This is an authentic Filipino dish that makes it one of the all time favorite.

Let me share to you my version of Pork Binagoongan with a twist. Yes! You have read it right, I made a twist of cooking it and I’m going to reveal it until the end of this post. So lets start!

Ingredients:

1 kilo of pork meat
1 cup of water
1/2 cup of vinegar
onions
pepper
garlic
potatoes
magic sarap
vetsin (MSG)
shrimp paste

Procedure:

First, I cut the meat into serving portions and boiled it for 20 minutes until the meat is soft. It will depends how high or low your fire is. But I highly suggest that when boiling a pork meat, you must keep it low for you to achieve the perfect softness of the meat. Don’t rush it!

When the pork meat is already soft, you can now add the remaining ingredients except for the vinegar. Let it simmer for 15 minutes while occasionally stirring.

After 15 minutes, add the vinegar. As you can see the vinegar pack contains 200 ml, but I used only half of it and simmer for a few minutes. Uncovered it and without stirring. Be careful not to overcook the pork so that it is still tender. Let’s wait until it will dry.

Wait! There’s more! While waiting to get it dry, you can now add my secret that makes it’s own mystery. The 2 tbps of brown sugar!

I used to put sugar on my Pork Binagoongan because for me, it balances the saltiness of it. I want everything on balance, the saltiness, sourness and sweetness. I want my taste bud can sense all of this with my Pork Binagoongan recipe.

When it gets dry, remove the pork from the pan and place it on a serving dish! Then here is the result! My adobo-inspired Pork Binagoongan!
