The berkoukes
Berkoukes is a traditional dish from the Maghreb, made from pasta-shaped grains of couscous, seasonal vegetables and meat, berkoukes are made from durum wheat semolina.
Ingredients:
Meat cut into pieces,
02 tomatoes,
01 onion,
Turnip,
A handful of chickpeas,
Sliced garlic cloves,
Salt,
Black pepper,
Cumin,
Paprika,
01 tbsp of tomato paste,
02 liters of water,
1 bowl of berkoukes (it looks like couscous, but large caliber), sold in supermarkets or grocery Maghreb).
Grate the onion and tomatoes,
Peel the turnips and cut them into cubes,
In a casserole, heat the oil and return the meat with the onion and the grated tomatoes,
Add spices and minced garlic,
Make a few more minutes,
Add the peeled turnips, chickpeas and the tomato paste diluted in a little water,
Cover with water and close your casserole and cook for 30 to 40 minutes,
Meanwhile, rinse the berkoukes with water and allow to dry,
Steam them like couscous once to make it softer,
Once your meat is cooked, throw a bowl of pellets in the sauce to cook them,
It takes 15 to 20 minutes.
