Easy Chinese rice for the summer 🍲

⬆️ This is just a spoiler from the cooking process so keep reading in order to see how you can prepare it yourself...

It is time for a new recipe and there is nothing more appropriate than an easy and delicious chinese rice with vegetables, chicken and pork meat. The ingredients are only 7 and the dish is light enough to enjoy it in the summer too.
In the end you will have four portions so you can simply call some of your friends to share this super tasty chinese rice with!

Here are the ingredients:

• 200 gr basmati rice 🍚

• 1 large size egg 🥚
• 1 medium size carrot 🥕
• 1 big red bell pepper 🌶
• 1 medium size zucchini 🥒

• 200 gr skinless chicken breast
• 100 gr chopped pork 🥩

• salt & pepper to taste

You can start by putting the rice in a casserole on the hub, preheated on medium temperature and leave it to boil.
After that you can cut the vegetables into small pieces like I did or if you do have any favorite shape, well you can also go for that.

The next step is to put that one egg in the frying pan and make the best scrambled egg out of it. After that you can put it aside in a bowl to chill for later.

The next step is to cut all of the meat into small pieces and put it in the frying pan too. Fry until the pieces become golden and crispy. You can also put them aside into a bowl to chill.

Now here comes the fun part!
Grab a big frying pan and put all of the vegetables inside and stir until they are soft and have a bit of golden crisp outside like this :

After that you add the scrambled egg and the meat into the frying pan and stir while you are enjoying the smell. At that point your mouth should already be watering!

Your final step is to add the cooked rice and stir for couple of minutes more.
When you turn of the hub you can add salt and pepper to taste.
At the end you are going to have a colorful and super tasty chinese rice looking like that :

You can serve it anyway you like but the dish is beautiful enough to only put it in a simple one-color plate and present it like this!
For me the entire process took about 30 - 40 minutes. This was with the preparation of the ingredients and serving, so you can call that “fast & furious chinese rice”.
Me and my boyfriend are huge fans of chinese food but we don’t eat it very often. Truth is that here in Sofia most of the chinese restaurants offer only bad looking food soaked in oil, and I have to say that this ruins my experience in general.
