I recently made a leek and cheese scone! (loaf)

in #cookinglast month

back again with another thing I made

This time, savoury! It is a leek and cheese scone, but it came out more like a loaf haha. The recipe I used was from TikTok, but it recently got taken down due to the music used (copyright). It's meant to be more of a loaf - rather than the small single scones.

A scone is like a type of savoury biscuit, that tends to be quick thick, like a cupcake.

The ingredients I used were:

  • 500g self raising flour
  • 1 tsp baking powder
  • 1 tsp dried parsley
  • 2 leeks
  • 110g butter
  • 175g grated cheese
  • 200ml water
  • milk to coat the top before baking

So things to note: I used way more than 1 tsp of dried parsley. I also added salt, pepper, oregano, and mixed herbs.
I used only 1 leek as in the video, the leeks the creator used were really thin, but I had a massive one haha.

I definitely needed a way bigger bowl - so struggled.

The recipe doesn't need any kneading, but it did get messy, I had to use my hands to rub the butter into the flour - and mix the leek around. This got really messy and I couldn't take any pictures for this stage as my hands were completely covered in batter.

Before adding the leek to the mixture, I cut it up and cooked it for a bit until it was soft, I left it a bit too long but I don't think that negatively affected the end result :D

So I couldn't really take pictures during the mixing process as my hands were covered in batter. Instead of pouring it onto the baking tray, I just used my hands to scoop it out as they were already covered.

It took about 30 minutes or so in the oven, I did lightly brush milk on the top before putting it in the oven.

It came out really nice and golden! Smelt really good too, I was excited to try it but had to wait for it to cool down.

Recipe review

Really tasty and didn't take too long to do, just needed a bigger bowl for it haha!
I think I would opt to make it in the traditional scone size (individual portions) just for ease.
The recipe resulted in 3 and a half tupperware boxes of the scone loaf, so really good!
