FOOD FROM THE GARDEN
For the past week or 2 we have been getting some tasty veggies from our garden. In fact we have had so many cucumbers and zucchini that I have been giving them away. Still no tomatoes, but maybe they will eventually show up.
Last year when we moved off grid I bought this cool little gadget.
Not having electricity I couldn't just plug a food processor in. So I got this gadget that does all kinds of things, one being noodles. I decided to turn my zucchini into noodles for spaghetti dinner.
Zucchini is heavy in water. I added some salt to dry it out some. They really do hold alot of water.
Spaghetti sauce with zucchini noodles and a cucumber tomato salad.
I love cooking! Whether it be for my family or for others. It's a way for me to show people how much they mean to me. This meal was special because I grew things I used. Having your own garden is so rewarding. All the hard work the last few months and we finally get to enjoy it.

Look at all that beautiful produce!! Good job, @essentialoilmom. That is a fine showing and zucchini noodles make great spaghetti. We're waiting on our tomatoes too - it always seems like we wait forever and then get deluged right at the end of the summer. I kind of wonder if I should try staggered plantings next year or some such thing to spread the wealth around a little more.
Next year we will try something different. A bigger space and more plants. I started late which is why they tomato plants haven't came in yet. Plus Zac had to give me a lesson or 2 the other day on pruning. Lol..Oh well! Loving what I'm getting so far. We found some jalapeno starting to grow. I think the bell peppers are a loss cause. We grew them to close to the zucchini. The zucchini plant covered all but 1 bell pepper plant.
Yes, I've had that same problem with overplanting. The plants just look so tiny when they start and sprawl all over the place when they mature. Beans are a classic - I don't think there really is such a thing as a "bush bean" since they all seem to vine to a certain extent and they block out everything around them. I keep leaving them more and more space but haven't found the perfect amount yet. I may have peppers for the first time this year since I finally gave them enough room and stopped the black spot fungus before it killed them, but it remains to be seen if all those baby peppers will get big enough before it gets cold.
I like the idea of the staggered planting @lturner. I will have to research is some and see. Our growing season is longer then yours, so it might be nice to try.
