Cupid Zero's French Toast Fantasy - Poor Knights' Breakfast - Recipe

Love it sweet in the morning?

I love a sweet surprise in the mornings from time to time, and my French Toast treat is just the thing! With notes of cinnamon and vanilla and topped with syrup or jam, this recipe is a sure fire success. French Toast is more commonly eaten in the afternoon than for breakfast in France where it is known as *pain perdu* (lost bread). The Germans today are mostly entirely unfamiliar with the dish, despite it being well known in the Middle Ages as *Arme Ritter* (poor knights). French Toast is a meal that makes use of the leftover bread from the previous day (or two) by soaking it in a milk and egg mixture and frying it up in a pan. I frequently make French Toast for my overnight guests and one of them asked me to write down the recipe for them for them, so... this goes out to you sweet cheeks!

Below I use the quantities necessary for a single serving. Multiply as necessary.

Ingredients you will need (all organic if possible):

  • 1/2 of a medium baguette (day old is important because it soaks up more of the egg mixture).
  • 2 large eggs
  • Milk (as you can see in the picture, I use almond milk or oat milk, lactose free and a slightly different taste)
  • 1/2 tsp Cinnamon
  • 1 tsp Vanilla Sugar (or baker's white sugar - I like the vanilla for the extra vanilla kick)
  • 1.5 tsp Vanilla extract (home-made is best!)
  • 1 tbsp butter (or more to taste) for the pan.

Utensils you will need

  • whisk
  • large mixing bowl
  • tongs or spatula
  • frying pan (I use a non-stick crepe pan)

Step-by-step instructions

  1. Add 2 large eggs and milk to the mixing bowl. Add slightly more milk than egg by volume.
  2. Add cinnamon, vanilla sugar and vanilla extract. Blend mixture vigorously with a whisk (a fork works too in a pinch).
  3. Cut baguette into thumb-thick slices. Add to mixture and fold repeatedly until bread has absorbed as much as it can.
  4. Preheat a frying pan over medium-high heat and then add butter. Let the butter melt and listen for it to start popping.
  5. Add bread and fry until browned, flip, add a little more butter if desired, and repeat.
  6. Serve, eat and enjoy!

Serve it sweet!

I like to serve with a mixture of maple syrup and raspberry jam for some variety, sprinkled with confectioner's powdered sugar. Add a sprig of mint for a palette cleanser at the end, and voila, a fantastically sweet and simple breakfast that will make everyone smile.
