Avocado oil is one of the few oils that is not derived from seeds.
This oil has a very high smoke point of 480 degrees F and when it is refined the smoke point is even higher at 520 degrees F.
This makes this oil excellent for frying.
The Avocado can be grown year round and some Olive oil processing facilities process there Olive oil in season and the Avocado oil for the balance of the year.
