I am a home cook who loves to cook and eat good quality ingredients.
Here is My recipe for VEGETABLE CHOW MEIN :
For one portion you will need :
Garlic (1 clove)
Ginger (fresh or dried) (1/2 inch, or teaspoon)
Organic veg stock cube (1/2)
Bell Peppers (Red, green and yellow) (Half each)
Carrot (half a large one)
Courgette (Zucchini) (half a large one)
Olive oil (or oil of your choice)
Chow Mein noodles (egg noodles) (70 grams)
Firstly PREP all your vegetables :
- Thinly slice one small onion, 1 clove of garlic and 1/2 inch of ginger and set aside.
- Thinly slice 1/2 red, green and yellow bell peppers, half a courgette, (zucchini), broccoli and half a carrot.
Add oil to the pan and fry all the ingredients from No.1 Prep. on a medium heat for 2-3 minutes.
Add the noodles to boiling water and cook for 4 minutes (or as per the instructions)
Add the remaining ingredients from No.2 Prep. and fry on a medium heat adding a few splashes of soy sauce, veg stock and few tablespoons of water.
Drain the noodles and add the vegetable mixture and stir well.
