I'm a fan of the sunchoke. I grow a big patch of them too. I usually dig em up in the spring, eat a bunch, get bad farts and also freeze and dry some too for later use. I feed lots of them to my rabbits too. They love them. They do make delicious soups. I usually make a bacon, potato, sunchoke mix soup. I've also made sunchoke chips which are not bad. How do you prepare them?
Generally we use them like and with potatoes. We have yet to have a large enough batch of them to do more than that, yet. I am still trying to decide where I want to plant larger numbers to let them take over.
yes they are best to have in a confined area where they can't get too out of control. Keep them away from any usable gardening space. They are actually not too difficult to eradicate from small areas if needed at some point in the future. Just keep pulling the shoots as they come up in the spring
