Enjoyed reading this. I've been looking for some sunchokes but they're about $25/lb. wondering if I can find some this fall at Whole Foods. I guess if just three can give that large a yield it might be worth it. Wish I had a neighbor that grew them.
You can find them in the stores for sure, and probably organic ones at wholefoods. It only takes a few but if you want to get a substantial harvest then probably best to plant 10 or 20 or more.
