Color Challenge : Wednesday Yellow - Egg Sandwich 📷

Today's 'Color Challenge for Steemians' as presented by @kalemandra.

Apparently there is a great divide in the world of people who like mustard and those people who apparently don't have any sense of taste, we will ignore the latter.

I have always argued that condiments have their appropriate place and food. Both BBQ sauce and ketchup contain tomatoes, but that doesn't mean you put ketchup on everything that you could put BBQ sauce on and vice-a-versa. You must have self control in order to determine the correct item to pair with your food. Another perfect example is hot sauce. You could stack every variety of hot sauce known to man, top to bottom, and there will still be some guy crawling out of the woodwork with his own favorite variety. But, just because it is a favorite, doesn't mean it goes with everything. Tabasco is for fried eggs, not sriracha sauce. End of argument.

Now, back to mustard. Just like hot sauce, mustard comes in an amazing amount of varieties. If I could have a pantry just for storing all the types of mustard to be used at the correct time with the correct food, it would be wonderful. Granted, I think the pantry would have to be 1/3 mustard, 1/3 hot sauce and 1/3 BBQ Sauces and rubs. Anyway, you can almost not go wrong when pairing a mustard to a food, if the food has already been paired to a mustard.

Fried egg and bacon sandwich, for example, is a perfect pairing for yellow mustard. Much maligned yellow mustard is the hobo of mustard. No fancy commercials, no special jars, just simple and ubiquitous. But, yellow mustard has a good flavor and is an excellent addition to many foods, fried egg sandwiches being one of them. Yellow mustard is just a starting spot to your mustard exploration.

On my sandwich today, I put Dijon brown mustard, the fancy mustard. Most amateur mustard aficionado would think that there is only one type of fancy mustard, but they would be wrong. Yes, I used the most common type, but there is a plethora of choices available. Start with the standard, then move ones with more spice and then the ones with a darker color. Just make sure you have the right food, because at most, a fried egg sandwich can only be paired with Dijon fancy horseradish mustard.
